BASIC ALMOND FLOUR MUFFINS

Ingredients
  1. 2 cups Bob’s red mills almond flour
  2. 4 tsp egg replacer and 8 tbsp water, (or 4 free range, organic eggs)
  3. 2 tbsp agave or honey
  4. ½ tsp baking soda
  5. 1 tbsp apple cider vinegar
Instructions
  1. Combine almond flour and baking soda
  2. In a separate bowl, combine eggs, (or egg replacer), agave, (or honey), and vinegar
  3. Stir dry into wet, mix well with wooden spoon
  4. Scoop, (I like to use a melon ball scooper) into greased or lined mini muffin tin.
  5. Place in the oven, (350) for approximately 12-14 minutes. Oven time will vary, so keep an eye on the muffins.
  6. Remove and let cool. Store in an airtight container in the fridge
Notes
  1. My kids LOVE these muffins with Earth Balance and homemade raspberry jam. Serve with apple slices and you have a yummy, balanced snack.
