Ingredients
  1. 1 cup coconut sugar
  2. ¼ cup coconut oil
  3. 1 egg OR 1 tsp Ener-G egg replacer, (add it to 2 tbsp water in separate bowl) OR 1 tbsp chia seed to 3 tbsp warm water
  4. ½ tsp salt
  5. 1 tsp baking soda
  6. 1 tsp baking powder
  7. 1 tbsp hemp seeds
  8. 1 ½ cups gluten free all purpose flour, (mine has xanthan gum in it, so I don’t have to add it, but make sure you add some according to instructions if you use something like Bob’s Red Mill’s)
  9. 3 ripe bananas
Instructions
  1. Pre-heat oven to 350
  2. Cream the coconut oil, coconut sugar and egg (or replacer), sift dry ingredients in a large bowl. I always use a sifter to lighten the flour a little.
  3. Blend the bananas and hemp seeds in a food processor or blender.
  4. Alternately, add the flour and banana mixture to the original mixture of coconut sugar and coconut oil. Do not over mix. If you like, add non-dairy chocolate chips to the batter, (I use Good Life from Superstore, Save-on or the health food stores).
  5. I always double or quadruple this recipe and make mini muffins. You could make large muffins or even bread.
Cooking time
  1. Mini muffins-17 minutes
  2. Large muffins-25 minutes
  3. Banana bread-65 minutes, (at least)

    These are the best!!!
    I have made these many times, and absolutely love how easy and Yummy they are. Our family eats them so fast I double the recipe, and they still go within days of making them. I have tried these a few different ways. I love making them with Oat flour as an alternative flour choice. I have also omitted the egg and just added another banana and they turned out the same. This is my “go to” banana muffin recipe now, since it;s so easy to make!
