For a quick and easy chemical and preservative free chicken soup look no further. This great recipe tastes fantastic and doesn’t get much easier.

  1. 4-6 cups of organic chicken broth, (Costco, this is a staple in our house)
  2. Handful of gluten free Giovanni spaghetti noodles, (Costco)
  3. 1 cup of carrots, chopped
  4. Bay leaf
  5. ½ tsp onion powder
  6. Salt and pepper to taste
  1. Pour broth in pot, add chopped carrots, bay leaf, onion powder and s&p. Bring to a boil for about 4-5 minutes.
  2. Break up the spaghetti noodles and add to the broth. I cook the noodles for about 5 minutes because I send this soup to school and they soften up in the containers. If you are eating at home, cook the noodles according to the package, (approx. 8 minutes)
Note: to make this really yummy, I also use my own broth. EVERY TIME after we have roast chicken, I gently boil the bones with the following for about 2 hours
  1. Carrots, onions, celery, bay leaf, dill, thyme, sage, and rosemary
After a couple of hours
  1. Let broth cool, strain the bones, veggies and herbs with a mesh strainer, and pour into a suitable container, (glass mason jars or large covered pot)
  2. Store in the fridge
  3. When it’s time to make the soup, remove from the fridge and skim off the fat
  4. Add veggies, noodles, some dill and bring to a boil
  5. ENJOY!!
